5. Veuve Clicquot Brut Rose

Veuve.jpgThis non-vintage Rose is the end result of a desire to create a Rose champagne with a delightfully luscious, fruit-based charm. Jacques Peters, the cellar master, and his team wanted a champagne that would be accessible and naturally engaging while conserving Veuve Clicquot's essential values in terms of style.

The wine has a luminous color with attractive pink glints. The nose is generous and elegant, with initial aromas of fresh red fruit (raspberry, wild strawberry, cherry, blackberry), leading to biscuity notes of dried fruits and Viennese pastries (almonds, apricots and brioche)

4. Domaine Carneros Le Reve Blanc de Blancs 

Carneros.jpgLe Reve is a classic tete de cuvee is the winery's finest Blanc de Blancs sparkling wine and frequently named America's Best. French for "the dream,"Le Rêve is crafted from 100% estate-grown fruit, making it a pure expression of Domaine Carneros.

Aromas of honeysuckle, ginger, baked pear, spice, tropical fruit and toasted brioche signal the wine's pedigree. The rich, round palate is balanced by superb acidity and graced with notes of white fruit, creme brulee and toasted almond that linger through an extraordinarily long, silky finish.

3. Bollinger Brut Special Cuvee

Bollinger.jpgA golden color, distinctive of black grape varieties. Very fine bubbles. On the nose, it has a beautiful aromatic complexity, ripe fruit and spicy aromas, with hints of roasted apples, apple compote and peaches. On the palate, there is a subtle combination of structure, length and vivacity. The bubbles are like velvet. Flavors of pear, brioche and spicy aromas, notes of fresh walnut.

Pair with all fish, especially sushi and sashimi, shellfish such as shrimp, prawns, crayfish and grilled lobster, poultry and white meat, cashews, parmesan or prosciutto.

2. Schramsberg Mirabelle Brut Rose

Schramsburg.jpgThe Mirabelle Brut Rosé is a specially crafted blend of Pinot Noir and Chardonnay from Schramsberg's select cool-climate vineyards in Carneros, Anderson Valley, and the Sonoma and Marin coastal areas of Northern California. Pinot Noir lots, including a few fermented with skin contact, provide brightness of berry fruit and body, while Chardonnay lots lend length and zest to the palate.

Additional flavor depth and aromatic complexity results from the blending of base wine lots aged in barrels and tanks for one or more years. The finished Brut Rosé exhibits fresh, elegant and toasty aromas that lead into lively and delicious fruit flavors on the palate.

1. Dom Perignon 2005

Dom Perignon.jpgThe wine’s remarkably rich bouquet reveals itself in successive waves: first the intense fruit, more black than red, which then melts into silvery minerality. Notes of praline and coriander complement the whole. The wine has a strong character and a powerful presence there is even something physical about it. Overall, it is structured, focused, firm and dense. Its intriguingly spicy, flowery finish remains present in each sip.
